Raw Mango Pickle(Lonche) - No matter which part of India you are eating from, meals are incomplete without a sharp puckering pickle aka Achaar. Every state/region/community/family in India makes pickles to preserve and celebrate in season produce. Western “pickling” focusses on vinegar-salt-sugar and few spices(if at all). In contrast, Indian pickles are potent, pungent and lip smacking with the focus on oil and salt to preserve. If you are in Australia like I am, right now, markets and Asian grocers are bursting with raw/green/sour mangoes. Over the weekend @mangubhatikar and I celebrated 13 years of being together with what I’d call a perfect Sunday afternoon @graceburn_tedesca - the food was excellent, the wine paired well, the sun shined as we walked through their gardens among vegetables, chooks and rose bushes. Followed by dessert with coffee to finish (it’s the right way). Sometimes when I look at us I think how did we get so lucky? And then I remember all the times we’d rather not have fought to make this work but did it anyway and it reminded me of the power of what if we have made together. I’m so lucky to share every day with the very best kind of man - equal parts entertaining and annoying, intelligent and ridiculous, selfish about sharing his prawns but selfless in all of life’s matters. Goan Chana Usal (a simple stir fry with dry green peas) - a must on the Diwali breakfast plate back home. Replace the white peas with any dry or canned beans on hand to speed things up. Soaked overnight and cooked with salt until tender. Tempered with oil, heeng, curry leaves, mustard seeds & green chillies. Seasoned with Turmeric, Kashmiri chilli powder, some jaggery, grated coconut, fresh cracked black pepper & coriander leaves. #goanfood #indianfood #diwali2024 #indiancuisine

Goan Mangane - a split chickpea, tapioca, jaggery

Goan Mangane - a split chickpea, tapioca, jaggery and fresh coconut milk pudding scented with cardamom & nutmeg. Very typically made in Goan homes for pretty much all festivities. It’s traditional to add a turmeric leaf for perfuming it like pandan but since I couldn’t find one, I used saffron. Personally I love it cold straight out of the fridge but lots of people love it warm.
